Chimneyside Chats with Moonray

They say the holiday season is all about home-baked goodies, holiday parties and family.

We are about to give you the sweetest guilt-free recipe this holiday season. For those of you that like snickerdoodles, these banana-doodles are delicious! And perfect to share. We make them at least three times or more during the holidays.


Banana-doodles

Things you’ll need: mixing bowls, hand mixer, and a non-stick pan


Ingredients:

- 2 ¼ cup Oat Flour

- ½ cup Coconut Brown Sugar (or regular Brown Sugar)

- ¼ cup pureed Banana

- ¼ cup Coconut Oil

- ¼ cup Apple Sauce

- 2 tsp Baking Powder

- ½ tbsp Vanilla Extract

- ¼ tsp Salt



Instructions:

1) Heat oven to 350 degrees.

2) In a bowl, whisk oat flour + baking soda + salt and set aside.

3) In a separate medium-large bowl: add coconut oil + coconut sugar. Use a hand mixer (electric works best) and beat them for 1.5 minutes (90 seconds).

4) Next, add applesauce and banana, continue to beat for another minute. Beat in vanilla, scrapes sides. Beat the mixture for 30 more seconds. At low speed, add the flour mixture that was set aside and beat until blended.

5) Next, make the Cinnamon coating:

¼ cup of coconut brown sugar (brown sugar)

1 tbsp ground cinnamon

On a plate or bowl, mix the coconut sugar and cinnamon and set it aside.

6) Take a golf ball amount of the blended mixture and roll it into a ball in the palm of your hands and gently roll it in the coating mixture you set aside. If you like crispy bottoms on your cookie, add dairy-free butter to the non-stick pan and place a cookie on the pan. Leave around 2 inches of spacing between cookies. If not, skip the dairy-free butter.

7) Place in the middle rack of the oven and bake for 12-15 minutes.

Once ready, enjoy with a cup of eggnog or cup of your favorite holiday drink!
