This time of year, nothing reminds me more of ‘home’ than the smell of fresh Latkes frying up for Hanukkah. It’s among my most treasured food memories. So, every year I get out the big cast-iron pan, and start shredding potatoes. But lately, since embracing a Keto lifestyle (and losing over 80 lbs), I had to find a solution for Latkes that cut back on the carbs, and this is it! The secret ingredient? Celery root! It ends up tasting just like potatoes, and brings me all the nostalgia I need during the Hanukkah season. Just make sure to try them with a little applesauce and sour cream on top!
